Miso-Marinated Black Cod
Cooking Time: 15 minutes
Ingredients (serves 4):
1/4 cup sake
1/4 cup mirin
4 tbsp white miso paste
3 tbsp sugar
4 black cod fillets, about 200g each
Set oven rack about 15cm from the heat source and preheat the oven's broiler. Place a baking sheet with aluminium foil and lightly grease the aluminium foil.
Whisk the marinate ingredients together in a smal lskillet (medium heat) until mixture simmers and thickens slightly (1-3 mins). Remove from the heat and cool completely.
Place cod fillets on the baking sheet. Brush fillets all over with the marinate and leave it.
Broil fillets in the preheated oven for 5 minutes. Flip the baking sheet and continue broiling until the fish flakes easily with a fork.
