Seared Scallop Salad

Cooking time: 30 minutes 


Ingredients (serves 4-5):

    1 box scallop meat (250g)

    2 tsp sesame oil

    2 cloves garlic, rushed

    4 slices bacon, chopped

    300g lettuce, leaves separated

    55g croutons

    Fresh Parmesan Cheese


    Mustard dressing

    3 tbsp mayonnaise

    1 tbsp olive oil

    1 tbsp vinegar

    2 tsp Dijon mustard


Method:

  1. To make dressing, place mayonnaise, olive oil, vinegar, and mustard in a bowl. Mix to combine and set aside.

  2. Heat sesame oil in a frying pan, add bacon to pan and cook, stirring for 4 minutes or until crisp. Remove bacon from pan and drain on paper towel. Add oil and heat over high heat, then add garlic and scallops stirring for 1 minute or until scallops just turn opaque. Remove scallop mixture from pan and set aside.

  3. Place lettuce leaves in a large salad bowl, add dressing and toss to coat. Add bacon, croutons, and shavings of Parmesan cheese as desired.

  4. Spoon scallop mixture over salad and serve.
