Beer Shrimp coated with Coconut Flakes
Cooking time: 30 minutes
Ingredients (serves 12):
1kg peeled prawn (deveined and tail on)
1 cup all purpose flour
1 cup beer
3 tsp baking powder
4 cups coconut flakes
4 cups oil for frying
Sprinkle baking powder evenly into flour. Beat the egg and add beer. Combine egg and beer mixture with the flour stirring in one direction only.
Hold prawn by tail and dredge through flour. Dp in batter and allow excess batter to drain off. Coat prawn with coconut flakes. Lay prawns on a tray lined with wax paper. Refrigerate prawns for 30 minutes.
Heat oil in a deep fryer to 175oC. Fry prawn in fryer for 2-3 minutes or till golden brown, turning once. Place prawns on paper towel to take off excess oil. Serve with sauce of choice.
